Barcelona again today for our second bitesize episode with a bakery, this time in Catalonia. Pa de Kilo is unique in a lot of ways, perhaps most notably in how locals have adopted it despite its location just off Las Ramblas. Oswaldo set it up during COVID and previously worked as a chef so the ways in which he has taken learnings from that industry is fascinating. The focus on the ingredients, and processes combined with novel twists and subtle differences to ordinary bakeries make this a fascinating listen!
